I recently found an old video of my Play Plus and noticed the same issue ( if indeed it is an issue ) in the video made 5 months ago by Nu Trix were the sound get triggered by rotating a knob value : https://www.youtube.com/watch?v=ZcDzIxrKzTY&t=766s at 15:44 
As I’m about to get a Unit back I don’t remember well what firmware was set back at the time.. in my video this triggering is audible also when the sequencer is ON which is not practical for Live performance..although I’m confused as keep watching Nu Trix video and some values were changed without audio issues…
That’s “Knob preview”. It’s something you can enable or disabled in the settings.

Haha, yeah. 
But yes, you can disable that behaviour in the settings. If i recall correctly it is called Knob Preview and has a couple different options (including turning it globally off).
It can be useful depending on your workflow, but i personally just turned it off as well.
