What is the problem?
Currently MIDI channels in the instrument list cannot be renamed neither globally, nor on a per-preset basis. In a multiple device setups, the devices are usually assigned to particular MIDI channels on a more or less permanent basis, thus the option to rename MIDI channels in the instrument list to reflect each user’s setup, would improve workflow.
What should this feature achieve?
This would improve the workflow and would allow to personalise the Tracker for each user’s setup. Especially for users who use the Tracker+ as the brain to control multiple devices on several channels, this would get rid of the need to memorise which device is assigned to which channel.
Are there any workarounds?
The only partial workaround is renaming tracks, however, that only works on a per-preset basis and does not in any way impact the instrument list.
This is then maybe worthy of a separate feature request, but here I would also add that having the option to rename tracks either globally or on a per-preset basis (similar to the performance mode) would be a nice option.

Several MIDI controllers like products by Morningstar Engineering, Luminite FX Graviton, Neuzeit Drop allows renaming MIDI channels globally.
